These tender chicken breasts with a sweet and tangy mustard flavor are ideal for slicing and adding to salads, wraps, or served over rice, potatoes, or noodles. They also double as a pizza topping!

Would you like a little extra honey mustard sauce? Double the marinade recipe, and reserve half of it to use as a basting sauce. Halfway through grilling, brush the chicken with the extra sauce.

Ingredients

  • 4 chicken breasts, skinless and boneless
  • Chives ( substitute with your favorite herbs or savories. I recommend chopped Italian parsley, chopped green onion, chopped rosemary, or even chopped tarragon.)
  • Honey
  • Dijon mustard
  • Whole grain mustard (sub with an extra tablespoon of Dijon mustard)
  • Extra virgin olive oil
  • Apple cider vinegar
  • Garlic (sub with 1/8 teaspoon garlic powder per clove of garlic)
  • Morton kosher salt
  • Black pepper

How do you flatten chicken breasts?

To flatten: Cover your cutting board with a large piece of plastic wrap. Place one chicken breast on top of it, and cover with another large piece of plastic wrap. Using the flat side of your kitchen mallet or a rolling pin, gently hit to flatten chicken breasts working from the thickest portion in the middle to the outer edges. Flatten each breast to a uniform thickness of 3/4-inch.
