Grilled London broil is marinated in flavorful ingredients, then grilled to perfection. The best part is that you can begin the marinating process in the morning and have it grilled and on the table for dinner in under 30 minutes.

We love grilled London Broil. It’s so easy! Make up the marinade, place the steak in an airtight container (zip top bag or container with lid), pour it over the top, seal it up, and store it in the refrigerator for 8-12 hours. The acids in the marinade will help tenderize tougher beef steaks and add amazing flavor! Grill this London broil over high-heat, then slice against the grain and serve! What is London broil?
London broil is a style of cooking rather than a cut of meat. Tough beef steaks are seasoned or marinated in garlic, soy sauce and brown sugar, then broiled. Marinating is preferred as it helps increase tenderness. London broil is synonymous with flank steak though top round or skirt steak are also used. Despite its name, London broil is a North American cooking technique, also referred to as the “Dawson.”

London Broil Recipe Ingredients:
- Flank Steak: About 2 1/2 pounds (sub with top round steak or skirt steak). Each of these steaks are easy to find at your local grocery store. The thing to keep in mind about flank steak is that it’s a cross between a roast and steak in width and density. So a longer marinating time is recommended. However, we don’t recommend marinating longer than 24 hours. We’ve found that 8-12 hours does the trick! It is important to let the marinated steak sit at room temperature for at least 30 minutes before grilling.
- Pineapple-rum and ginger steak marinade: This mixture is made with pineapple juice, dark rum, soy sauce, garlic, and other wonderful ingredients. What we love about this marinade is that it gives the meat a delicious umami flavor with a slight hint of sweetness. The pineapple helps tenderize the flank steak, and the rest of the ingredients bring out the rich beefiness of the meat. Cooking Method
- Combine marinade according to the recipe instructions.
- Place flank steak into a resealable plastic bag, pour marinade over the top and work it around the meat for an even coating. Seal the bag and place it in the refrigerator for 8-12 hours.
- Prepare your grill for high-heat cooking.ย
- Remove the steak from the marinade
- Place it onto the grill, close the lid and cook for 5-7 minutes; turn the steak over and cook for an additional 5 minutes. Cook time is entirely based on your desired doneness. We recommend medium-rare to medium doneness for this recipe (an internal temperature of 135-140 degrees F). For more information, please read my steak temperature guide.
- Once cooked to your liking, remove the grilled London broil from the heat and place it on to a clean cutting board.
- Let the meat rest for at least 10 minutes before carving it against the grain. Place onto a large platter or serving dish and enjoy!
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or in a skillet on the stove top.

- Lightly score the flank steak with a sharp knife or piece with a jacquard to allow the marinade to permeate the meat and shorten cooking time.
- You can substitute the flank steak with skirt steak or top round. Skirt steak tends to be thinner cut of beef than flank, so keep this in mind when grilling, and adjust your cooking time as needed.
- Keep in mind that beef needs salt to bring out its natural flavor. Ingredients like soy sauce can help add the needed sodium, and provide extra flavor.
