Plank Grilled Brie

This Plank Grilled Brie is by far one of the easiest appetizers to prepare on the grill. The trick to petite brie is that they come in different varieties, so you can mix and match flavors. I suggest pairing different preserves with each type. Ask your local cheese-monger for a sample and some suggestions. You can also pair each with a different wine. Do make sure to purchase a brie cheese encased in the rind. Doing this will make the grilling process easier.

Why Grill on a Plank?

Planks provide a platform for most foods that are small or might fall apart on the grill. It is also an ideal method for indirect grilling. Foods roast over the heat, pick up the wood and the smoke flavor but are not directly exposed to the flame. While it won’t produce grill marks, this method allows foods to cook evenly and safely. Ingredients:

  • A large oak plank
  • 2-3 petite brie wheels, or use 1-2 regular sized brie wheels
  • Fig Preserves
  • Chopped almonds
  • Crackers, bread, or crostini

Grilling Brie on a Plank:

  • Soak plank for at least 30 minutes in tepid water. 
  • Prepare your grill for medium heat or 350 degrees F.
  • Remove plank from water and dry off thoroughly with paper towels.
  • Unwrap brie wheels and place them onto the plank. Set plank onto grill grate, close lid, and let cheese warm through for about 7-10 minutes. If using larger brie wheels, heat through for 10-13 minutes.
  • Next, spoon about 1/2 to 1 tablespoon of preserves right on the top center of each brie. Top with almonds. Save some extra preserves and almonds to serve on the side. 
  • Let the plank grilled brie cheese continue to warm for about 2-3 more minutes.
  • Remove and serve with crostini, crackers, or sliced apples.

Serve this Plank Grilled Brie as an appetizer. I will make this dish for parties, special occasions, and during the holidays. It makes a great appetizer for New Year’s eve!

Ingredients

  • 1 large oak plank (red oak)
  • 3 petite brie wheels
  • 1/4 cup fig jam
  • 10-12 almonds
  • crackers, bread or crostini

Instructions

  • Soak plank for 30 minutes in tepid water.
  • Toast almonds in a skillets, making sure to move them around often so they do not burn. This process will take about 3 minutes or so. Once they start to toast, it will go fast so keep a close eye on them. Remove almonds from heat and place onto a cutting board. Using a sharp knife, chop into smaller pieces. Set aside.
  • Preheat grill for medium heat.
  • Remove plank from water and dry off thoroughly with paper towels.
  • Unwrap brie wheels and place them on the plank. Set plank onto grill grate, close lid and let cheese warm through for about 7-10 minutes. Next, spoon about 1/2 to 1 tablespoon of preserves right on the top center of each brie. Top with almonds. Save some extra preserves and almonds to serve on the side. Let cheese continue to warm for about 2 more minutes.
  • Remove and serve with your chosen accompaniments. I recommend crostini, crackers, or sliced apples.
