Red Wine and Herb Marinated Flank Steak

Marinated in a flavorful red wine mixture, this flank steaks is grilled and served with sauteed onions and mushrooms. This dish is so versatile you can serve it with noodles, dumplings, grilled or steamed vegetables, or rice. A great option for weeknight meals, but fancy enough for company.

Ingredients

  • 1 1/2 pounds flank steak
  • 10-12 mushrooms, halved (white or cremini mushrooms)
  • 12 " seasoned cast iron skillet
  • 1 medium sweet onion, cut into thin rings
  • 1 1/2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • for marinade:
  • 1/2 cup red wine
  • 1/4 cup olive oil
  • 2-3 cloves garlic, minced
  • 1 tablespoon chopped fresh oregano
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon chopped fresh rosemary
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon black pepper

Instructions

  • Combine marinade ingredients in a small bowl. Place flank steak into a resealable plastic bag. Pour marinade over top making sure all of the steak is well coated in mixture. Seal bag and place into refrigerator for 4-12 hours.
  • Clean mushrooms and cut each one in half. Slice onion.
  • Preheat grill for medium high heat. Place cast iron skillet onto grill to warm up before adding vegetables.
  • Remove steak from bag and place onto grill. Cook for 8-10 minutes per side based on thickness of cut and your desired doneness.
  • Heat oil in pan and add onions. Cook for 3-4 minutes or until they start to become tender. Add mushrooms, season with salt and black pepper and cook for an additional 3-5 minutes.
  • Remove both the steak and vegetables from grill. Set cast iron pan onto a heat safe surface. Carve steak into thin slices and serve with onions, mushrooms, and your favorite side dish.
