Slow Grilled Beef Short Ribs

The secret to mouthwatering beef short ribs is to cook them low and slow. This makes them both tender and very flavorful. Use a drip pan to prevent flare-ups since beef ribs contain a lot of fat that burns quickly.

  • 4 pounds beef short ribs

for marinade:

  • 2/3 cup dry red wine
  • 1/3 cup soy sauce low sodium
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper


  • Combine marinade ingredients in a medium bowl. Mix well. Place the ribs into two resealable plastic bags, and pour half of the marinade into each bag. Make sure the ribs are evenly coated. Gently release excess air at the top of each bag, seal, and place into the refrigerator for 4-8 hours.
  • Preheat grill and prepare for indirect cooking. When the grill is ready, remove ribs from bag and place on grill to cook indirectly. Discard any remaining marinade.
  • Cook for 1 to 1 1/2 hours turning every 15 minutes. Once ribs reach an internal temperature of 165 degrees (make sure to check several), remove from heat and serve. If preferred, you can apply your favorite barbecue sauce during the last 15 minutes of cook time.
