Ingredients

  • 4 pounds beef short ribs

for marinade:

  • 2/3 cup dry red wine
  • 1/3 cup soy sauce low sodium
  • 2 tablespoons vegetable oil
  • 2 cloves garlic minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Combine marinade ingredients in a medium bowl. Mix well. Place the ribs into two resealable plastic bags, and pour half of the marinade into each bag. Coat ribs well. Gently release excess air at the top of each bag, seal, and place into the refrigerator for 4-8 hours.
  • Preheat grill, 250 degrees F., and prepare for an indirect cook. When the grill is ready, remove ribs from bag and place away from the coals/intense heat. Brush marinade on ribs, and close the grill lid.
  • Cook for 1 1/2 hours, turning every 15 minutes. Once ribs reach an internal temperature of 165 degrees F., remove from heat and serve. You can also apply your favorite barbecue sauce during the last 15 minutes of cook time.
