Bill Best, a brilliant mind, was the driving force behind the development of several infrared devices that converted the heat from a gas burner into pure radiant heat. Traditional grills, on the other hand, heat the air and the surrounding metal parts, such as the cooking grates. While there is always some radiant or infrared heat, an infrared grill has very little if any, airflow, and the cooking heat is solely radiant. It’s similar to the heat you feel from the sun on a cold day.
Once Best’s TEC’s patents expired, several companies began offering infrared grills and burners. One early adopter of this technology was Solaire, who exclusively produces infrared units like this Solaire 27-inch compact two-burner model. These units are more expensive due to the higher production costs and the perception of the technology as a premium feature.
Solaire 27-inch Heating Capabilities
What are the features of a grill like the Solaire 27-inch Infrared Built-in Gas Grill? This grill can reach temperatures up to 1,000 degrees F, which makes it perfect for searing. It excels at cooking at very high temperatures, which is ideal for grilling a steak, chop, or burger. This cooking technique creates a seared, almost crusty surface on the outside while heating the meat through the middle. It’s the best way to achieve a perfectly cooked rare or medium-rare steak.
The Solaire 27-inch is small, and my recommendation is to put it alongside a traditional grill. Infrared grills are powerful but not as versatile as traditional grills, particularly when it comes to more delicate foods like fish or vegetables. This grill does not support indirect grilling, so large items such as whole chickens or roasts need to be cooked on a different grill. However, if you want to make a fantastic steak, this is one of the best grills on the market for that.
