What type of ground beef is best for making burgers?
Look for an 80/20 ratio ground beef for burger making. Lean beef is great, but it’s not the best choice for this recipe. We recommend using ground chuck as it contains the right fat-to-meat ratio. You can also use a combination of chuck and sirloin for these blue cheese burgers.

How to make Ultimate Blue Cheese Burgers
This blue cheese burger recipe involves three key steps. The first step is making perfect patties, followed by caramelizing the onions, then grilling these juicy burgers.
The patty:
You have the option to complete this step right before grilling or several hours before. If you want to make the patties hours ahead, store them on a parchment-lined baking tray in your refrigerator. Cover with plastic wrap to keep them from drying out. Let the patties sit at room temperature for 20-30 minutes before grilling your ultimate blue cheese burgers.
How to make burger patties:
- Mince the bacon with a sharp knife. It should be the same consistency as the ground beef.
- In a large bowl, combine ground beef, bacon, onion soup mix, and Worcestershire sauce.
- Form mixture into 4 equal-sized hamburger patties. Make a small dent in the center of each patty so they do not become round during the cooking process.

Cooking the onions
Caramelized onions adds a nice sweet and savory flavor to these blue cheese burgers. It only taste 5 minutes to cook, and voila! you’ll have a delicious burger topping. If you want to go a step further, try smoking the onions!
- Melt butter in a skillet over medium heat.
- Add sliced onions, and cook for 5 minutes until tender, translucent, and caramelized. Reduce heat as needed. The onions should be soft.
- Season with salt and pepper. Stir through, cover the pan and keep warm.

Grilling the burgers
- Preheat your grill to 375 degrees F or medium-high heat.
- Place the patties on the grill and cook for 6 minutes per side until they reach an internal temperature between 160-165 degrees F.
- If you’ve ground the burger meat yourself, you can cook them to an internal temperature of 150 degrees F. Still, we do not recommend it with store bought ground beef.
Don’t forget the buns!
Toward the end of cooking time, brush the cut side of the brioche buns with olive oil. Place the oiled buns on the grill, and toast them for 1-2 minutes until golden brown.
