Create a two-zone fire by placing the hot coals on one side. For pellet grill, set cooking temperature to 375 degrees F.
Trim off excess fat from the chicken thighs, and cut them into 2" chunks.
Next, season them with your favorite bottled chicken rub.
Gently combine until all of the seasonings are well distributed. Let it stand for 10 minutes.
Cut bacon slices in half.
Place one piece of chicken in the center of bacon half, roll them up, and slide them onto a wooden or metal skewer.
Repeat the process with 5-6 bacon-wrapped chicken pieces on each skewer.
Place the skewers over direct heat for 2 minutes per side.
Next, move them over the indirect cooking side, close the lid, and coon them for 20 minutes, or until they reach an internal temperature of 170.
Transfer the skewers over direct heat once more, and sear them for 1-2 minutes per side.
Remove from the grill and let them cool for 5 minutes before serving.
